jsonpatch is a library that implements JSON Patch (RFC 6902) for applying and generating patches for JSON documents. It is similar to @sanity/mutator in that it allows for document modifications, but it follows a standardized format for patches, making it more suitable for interoperability with other systems that support JSON Patch.
Immer is a package that allows you to work with immutable state by applying changes to a draft state, which is then used to produce a new immutable state. While @sanity/mutator focuses on mutations in the context of Sanity's data structure, Immer is more general-purpose and widely used for managing immutable state in JavaScript applications.
